Changing unit on shift

What actions make the units in the shops and prison change. Do I have to continue playing actual missions to get another chance at persuading prisoners or is there something else i could do (in conquest)

Edit: found out I just have to win a Mycastle battle

Not 100% sure about this, but I think units in the buildings change each time you clear a map (Chapter, DLC, MyCastle battle, etc.) or let some real time pass. However, some buildings don't let you use their features during a certain time after you used them, even if the shopkeeper changed (like the Lottery, Private Quarters, etc.). I don't know for the prison since I don't use it, but I think it might be the case.

At the right side, there is a clock-like band. It rolls with every battle you fight and by real time. Certain options are triggered at certain MyCastle moments only, like getting visitors to your room only at evening or night.
