As the title suggests, i've always wondered how does the Luck stat work in the series?

the higher your luck, the lower opponents crit.
also helps with evade/hit in the GBA games

Slightly increases Hit, Avo, and CEV. In many of the games, it's one point of each, but in others, it's less, or doesn't increase all of them. It always increases Hit less than Skl does and Avo less than Spd does, and reducing enemy crit rates isn't often too big of a deal, so it tends to not matter much.

Generally, it affects accuracy, avoid, and crit evade. In most FEs, accuracy is (Skill x 2) + Luck + Support bonuses, avoid is (AS x 2) + support bonuses + terrain bonuses + Luck, and Crit evade is often Luck + Support Bonus.

To be precise, it's:
In FE5: +1 Hit, +1 Avd, +0.5 CEv per point
In the GBA games: +0.5 Hit, +1 Avd, +1 CEv per point
In the Tellius games: +1 Hit, +1 Avd, +1 CEv per point
In the DS games: +0.5 Hit, +0.5 Avd, +1 CEv per point

To complete the list:

FE1/2: +0.5 Crit, +1 Magic Avo
FE3: +1 Avo, +1 CEV
FE4: +1 Avo

And it's my understanding that in FE13 it increases Hit and Avo by 0.75 each. Probably still increases CEV by 1.

In FE8, non-Thief units have a [Luck + 1]% chance of finding hidden items in the desert.

That formula holds true for most games concerning hidden items, if memory serves.

In FE9 and FE10 it's Skill+1.

1/2 luck = critical evade in some games . I think it's luck = critical evade in most games though . luck is only a factor in critical in gaiden and fe1 as far as I know.

Crit evade. Crit is usually affected by Weapon's Crit, SKL/2 (varies in some games) and an innate crit stat on some classes (in some games) like Swordmaster.
