Do you love bacon?

The board meeting is over and we peasants employees now have a chance to eat their leftover breakfast. Eggs and potatoes share a giant bowl, but the bacon fills a giant bowl all by itself; I like the way upper management thinks!

So, you got anything bacon you want to share?

I love bacon drippings. If butter is the gold standard in the world of culinary arts, then bacon drippings is easily worth its weight in butter. As far as I know, the only fat/oil that is noble enough to touch filet mignon is bacon drippings and butter. I cannot cook filet mignon without a mixture of butter and bacon drippings.

Interestingly, while I like a lot of my meat raw or nearly raw, such as poke, ceviche, chirashi don, and filet mignon, I like bacon that is slightly burnt. However, I do like pancetta raw though.

Besides pure bacon and filet mignon, my favorite bacon dish would probably be potato soup with lots of bacon in it.

Oh yeah, one of the few benefits of the current trade wars is that bacon could be potentially cheaper.

I still feel hungry after eating all that bacon. I will go see if they have any more bacon and help myself to a second plate.

I eat non-racist/misogynist/avaricious/political/human pig, but I don't care for bacon actually. Haven't had it much, but from what I've had, I'm not fond of it. Nor am I of cold cut ham- the holiday dinner kind is fine. Pork tenderloin or BBQ is the best way to have swine. I think overall I'm more of a beefeater. 

I've also been reading The Jungle for school recently. It's free online, take a gander over a few chapters. It's muckraking propaganda for a good cause, sans the Socialist endorsement, but it is terrible as literature- the main family is just way too gullible and the events a little too dramatized.

The bacon actually shares a bowl with sausages, it is just that the sausages were hidden at the bottom so it looked like only bacon was in the bowl. There are still some bacon left in the bowl, but now it is mostly just a huge pile of sausages (I bet Nina would love this) that no one seems to care about.

Oh, how do you guys deal with the guilt that comes with eating meat? While I do not feel bad about killing fish, I do feel bad about killing mammals and birds for meat. I try not to think too much of it, but it makes me feel horrible to know that young calves are horribly mistreated while kittens and puppies have a much easier life. I want to defend calves and piglets too, but it is hard to eliminate meat. I do try to eat less meat though.

I'm a simple person, your standard steak suits me fine. Not filet mignon though, that is a little small. Always medium, unless a good restaurant, medium-rare is fine there. If it needs sauce, Peter Luger, but if it is a good enough steak, and the last one I had (at home no less!) was, then I shouldn't need any accouterments. I also make sure to let the steak rest a few minutes before eating, to let the juices settle.

Pork or beef, sausage can be good, but I think it depends on the link/patty, sausage seems to be a mixed bag in the meat world when it comes to quality- some good, some aren't.

 

Unfortunately, I'm a meat and cheese person, my palette for fruits and vegetables is limited- although asparagus and spinach ravioli are good and I'm gradually getting better. I wish I wasn't so though, and perhaps in the later years of my existence will try to cut back. If not for the animal suffering caused by it, then for the sake of environmental sustainability. For all the feed and space wasted to produce a pound of meat, so many more pounds of fruits and veggies could be grown instead. The US eats a disproportionately large percentage of the world's meat, we should set a better example for those who see us as the peak of the modern good life. But I won't swap over to eating a more sustainable protein in the form of insects. Not consciously at least.

You could eat like two or three chunks of filet mignon so that the size matches a normal steak.

For me, after I tried filet mignon, I cannot eat regular steak anymore. I find regular steak to be unappetizing due to all the extra fat and membranes on the meat. I could render out the fat and membranes, but that means I have to cook the steak to way beyond rare. I guess I could just cut the fat out before I cook, but that is a lot of extra work.

I do not usually put any condiments on my steak either unless it is not good enough. I prepare my filet mignon with a simple salt and pepper rub, but I sometimes spice it up a little with hints of other stuff like nutmeg, brown sugar, or garlic powder. I ate regular steak a few days ago when I was visiting my dad, and while it was okay, I had to use some A1 sauce to give it more flavor to offset the unpleasant fat still stuck on the side of the steak.

Here you are loving bacon drippings- presumably mostly fat, and yet disliking the deliciousness of fat on steak. Not totally hypocritical, different meats, different circumstances, but I do enjoy the fat on my steaks, wholly lean is mean! 

But I think we can live with each other's differences *pull you close for hugs with a giant pork rib*. In meat we eat towards happy coexistence with each other, if not with livestock.

And A1 is disguising, I had it once, and I believe it should be placed in the same secure facilities we store nuclear waste for hundreds and thousands of years to come.

True.   Actually most vegatarians/vegans I know have said that the hardest thing to give up by far was bacon.  Here in Chicago we have an annual baconfest, can never get tickets though it sells out immediately despite its high price.  Essentially it is the top chefs in the city making dishes inspired by and including bacon.

Anyways back on topic.  Bacon is awesome, delicious.  A BLT with garden fresh tomatoes.  Just bacon by itself for breakfast, or worked into mashed potatoes, or put on a fresh buttermilk biscuit...god.  Maple glazed, bacon donut.  Bacon makes burgers better.  Bacon wrapped scallops?  Bacon wrapped filet mignon?  I prefer my bacon meaty chewy but crispy on the edges.  Bacon isn't just from domestic pigs either.  Have you had bear bacon?  Pretty good.  Wild boar bacon is more flavorful.  

Oh on bacon fat.  This type of Uruguay steak sandwich I make sometimes, has you cook up some bacon and then fry strip steak in the bacon fat.  Holy crap one of my favorite sandwiches.  Bacon is the meat that keeps on giving, long after we are gone more and more ways to use it deliciously will be discovered.  All hail bacon!

Good point. Bacon breaks all kinds of rules for me. I like bacon that is a little burnt, yet I prefer most other meats to be raw or rare.

You know, I never thought about cooking steak in its own fat before. Maybe I will try that out and put in the effort to trim off the beef fat and render it in the pan first and then put the steak in.

Makes me feel a little guilty for the poor baby livestock we slaughter every day. I hope we can eventually grow meat in a lab.

That seems pretty on topic though. If anything, I was derailing my own topic with beef!

There are vegetarian bacon on the market now, although I think they are pretty expensive and they are not quite the same as bacon yet.

What about cows and chickens? I always feel guilty when I read articles on animal abuse and factory farms. Cows have intelligence and have emotions too, and it makes me feel guilty when I drink milk or eat veal. Same thing with chickens and any mammal or bird.

The best I can do so far is to cut down on meat. Quiting meat is too hard, especially bacon.

I try to eat free range chickens and grass fed beef. I'll never eat veal, because that has always been one step(More like 3 or 4 steps) too fucked up for me.

Cows aren't the dumbest animals on the farm by a large stretch, but they're not super intelligent. They're probably about average intelligence for mammals. Pigs I probably give too much credit, but that's generally where I draw the line. Cows haven't demonstrated that they're smarter than pigs, so they go in my belly. Anything whale, dolphin, or octopus related also gets the "too smart" treatment, but that's much, much easier to avoid.

Their strong emotions makes it harder, which is why I try to go grass fed. Anything to make their treatment marginally better.

I wasn't thinking of bacon until I saw this. And it kept bothering me while I was working out because I haven't eaten lunch at that point so I went out to get some bacon after the workout. Opened the package only to realize there were some leftover food in the fridge so I just put the bacon in a zip block bag and stuffed it in the left corner of the fridge because I got tired of the bacon strips drying out on the days I don't have them.

As for my opinion on bacon, I like it fine. Don't love it, don't hate it. I don't think I can eat it everyday though.

Story time: when my brother was little he once took a whole bunch of bacon out of the fridge in the garage and him and the neighborhood kids fed it to the neighborhood dogs. And I got asked if I moved it. But he denied it and said somebody stole it. 

He also tried to dig a swimming pool in February in the middle of the backyard.

This is a wild thread.

But yeah, bacon is radical. Although it's hard for me to eat bacon from pigs I haven't raised myself. Store-bought bacon is just can't measure up. It's not bad, but it's not the good stuff. You only get that by taking the pig on a mile-long walk every day for about 90 days, feeding it cream cheese in the last month, and making sure you've got a complete pelleted feed with the necessary minerals, proteins, ect. Also avoid raising on cement to prevent pig anemia. Those iron shots can mess with the finishing and backfat (gotta get that 1/2 inch, no more no less).

Just saw this on Instagram. That calf seems smart enough to play fetch. These videos make it harder to eat meat everyday. At least there is still fish.
